Creme de Menthe Cheesecake (no bake)

This is my favorite cheesecake! Generally, cheesecake is not in my top 10 list of desserts, as I usually find them a little too rich. Not this dessert! Adding whipped cream just lightens it up, so you could probably eat 2 pieces. 🙂 Plus, this dessert is super easy to make with few ingredients. I’ve been making this pie for 15 years and it’s always a favorite!

Oh, don’t fret if you end up with leftover filling! Just throw it in a container and put it in the fridge. Mathieu expects leftover filling, and ends up eating it up with a spoon. It’s also yummy as a fruit dip!

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 2 x 8-oz. pkgs. cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 2 tbsps. green creme de menthe, or more to your taste
  • 1 cup whipping cream, whipped (The original recipe asks for 2 cups of whipping cream, which I found diluted the other flavors too much. You can whip 2 cups of the cream, but then only use enough to get the flavor you want.)

Combine crumbs and butter; press onto bottom and sides of 9-inch pie plate.

Combine cream cheese, sugar and creme de menthe, mixing until well blended. Fold in whipped cream; pour into crust. Chill several hours or overnight. Garnish with chocolate curls, if desired.
